Daina's Favourite Chili Recipe
Ingredients
- 2 Tbsp olive oil
- 1 onion
- 2 cloves of garlic
- 2lbs ground turkey (or leftover turkey)
- 1 lb butternut squash peeled, seeded and cut into one inch pieces
- 1/2 c chicken broth
- 2 540ml diced tomatoes (no salt)
- 1 284ml mild or medium diced tomatoes with green chillies
- 1 398ml tomato sauce (no salt)
- 1 540ml black beans
- 1-2 Tbsp chili powder
- 1-1 1/2 Tbsp cumin powder
- Pepper to taste
Instructions
Step 1
Heat olive oil in a large pot over medium heat.
Add onion and garlic; cook and stir for 3 minutes. Stir in turkey and cook until crumbly and no longer pink, about 5 to 7 minutes.
Step 2
Add butternut squash, chicken broth, tomatoes with chilies, diced tomatoes, black beans,and tomato sauce; season with chili powder, cumin, and pepper. Bring to a simmer, then reduce heat to medium-low, cover, and simmer until the squash is tender, about 20 minutes.
Can be frozen into portioned meals for busy days!
