Daina's Crockpot Vegetable Bean Soup

Ingredients

  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 1 large onion
  • 4 cups organic vegetable broth
  • 1 can Romano Beans (or substitute your favorite beans)
  • 2 cups diced plum tomatoes (you can use canned as well in a pinch)
  • 1/4 cup pearl barley
  • 2 cups fresh spinach leaves, chopped
  • ground black pepper

Instructions

Add the first 6 ingredients to your crockpot and cook on low for approximately 5 hours. Then add the pearl barley and spinach and cook for another hour until the barley and spinach are cooked, but not mushy.  This recipe freezes well and is a rich source of fiber!
