Daina's Crockpot Vegetable Bean Soup
Ingredients
- 2 large carrots, sliced
- 2 stalks celery, sliced
- 1 large onion
- 4 cups organic vegetable broth
- 1 can Romano Beans (or substitute your favorite beans)
- 2 cups diced plum tomatoes (you can use canned as well in a pinch)
- 1/4 cup pearl barley
- 2 cups fresh spinach leaves, chopped
- ground black pepper
Instructions
Add the first 6 ingredients to your crockpot and cook on low for approximately 5 hours. Then add the pearl barley and spinach and cook for another hour until the barley and spinach are cooked, but not mushy. This recipe freezes well and is a rich source of fiber!
